Pina Colada Lassi

Yes you are reading right. It's lassi made from Pina colada ingredients. Interesting yes , delicious too. Tell you the truth, I don't like plain yogurt.  This is an Indian twist to very famous alcoholic drink. So I always look for flavors so I can have my yogurt. I made this before also but that time I didn't had my blog so now made it again so I can share it with you. You can totally adjust ingredients as per your taste and quantity. I made it two glasses but in summer you can add ice in it and make it more of it too.

Ingredients:

1 small bowl of pineapple in juice (you can use fresh or canned too)
1 cup plain yogurt (if you can use greek that's even better)
1/2 cup coconut cream (if you can not find this then use coconut milk)
sugar or honey as per taste.
Decoration is totally optional
Few ice cubes

Method:
Put everything in blender and mix it till becomes nice and smooth.
Pour into two tall glasses and garnish with fresh cut fruits in toothpick.
Drink immediately




 Next time maybe I will add rum into mine.

Vegetable Deewani Handi

This is  a very similar dish to Mixed vegetables. You cook  boiled vegetables in fragrant sauce and served it with paratha or roomali roti. I did not boiled vegetable because I think that boiling and then adding to any curry , vegetables don't absorb that flavor very much. But If you have boiled vegetables on hand and make this curry in jiffy you can do it. Adjust the spices and vegetables as per your taste. Instead of vegetables you can make this with paneer and capsicum or paneer and carrot. But I don't like paneer that much so I avoid when ever I can. Instead I added soya chunks.

Ingredients:

2 cups mixed vegetables ( i had cauliflower, carrot, corn, peas, red and green capsicum, soya chunks)
2 onions puree
2 tomato puree
2 tsp ginger, garlic and green chili paste
salt to taste
3 tsp oil

Make powder masala:
10 whole cashews
6 green cardamoms pods
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin and coriander powder
2 tsp kasoori methi (dried fenugreek leaves)
pinch of nutmeg and clove powder
1 tsp Milk powder (if you dont have this you can use milk at the end)

Method:

Make powder masala and keep it aside.
In a non stick pan, add oil in it
When heated add onion puree and cook till its dry and changed its color.
Add tomato puree and mix it.
Add all powder masala and ginger , garlic and chili paste and cook it till oil flots on top.
If you are using boiled vegetables don't add too much water, but if you are using raw vegetables add enough water to cook those and add all the vegetables in it.
Add salt and cook  and covered till vegetables are cook.
Adjust the gravy thinkness and if you are using milk, add it now.
Mix it well and served hot with paratha.
I had with paratha and shredded  beetroot , carrot, white radish raita.

Made cutlets / tikki out of left over subji, adding one boiled mashed potato. Make Tikkis and roll it in panko bread crumbs and shallow fry it on both sides.

Barley Raita

I make different kind of salad or raita with my diner so can't get bored by same thing. By now you guys know that I like different kinds of food everyday. So this is one of my favorite raita which I wanted to share it with you. It's healthy and you can substitute with your favorite raita vegetables. I use onion, tomato, cucumber, green chili.

Ingredients:
1/4 cup soaked Barley (soaked at least for 6-8 hours)
1 finely chopped onion
1 finely chopped tomoto
1 finely chopped cucumber
1 finely chopped green chili
few stings finely chopped coriander leaves
4 big tbsp plain yogurt
salt as per taste
pinch of sugar
1 tsp roasted jeera powder

Method:
Soaked Barley in water for 8 hours, wash and clean and dry it.

add all the ingredients and mix it well. 
Eat with your main course of diner.

Vegetable Kolhapuri with Soya

I love spicy food that's by now everyone know. So I wanted to make this spicy gravy called Kohlapuri but not with same old ingredients but my way with Lal michi Thecha. Thecha normally made with green chilies, garlic , peanuts and other spices but I wanted to make my really spicy so I made it with red dry chilies , garlic and salt and vinegar. That's it and I mix this chutney in my onion puree and voila result is amazing. You can adjust spice level according to your taste buds. I like it spicy so I added more. This is my way of dish. Serve this with rice or paratha and you are in spice heaven.

Ingredients

2 cups mixed vegetables ( I had cauliflower, corn, peas, carrot, capsicum, zuchini)
1/4 cup soya soaked and rinsed
2 onion puree preferebly red one
1 tbsp tomato puree
2 tbsp Thecha
salt to taste
1 tsp cumin and coriander powder
1 tsp garam masala
Lime juice to taste
2 tsp oil

For Thecha :
15 red dried chili pepper
15 garlic cloves
salt to taste
vinegar to taste
water

Mix everything in blender and make a fine puree. Keep it aside.

Method:

Put onion and two spoons of thecha in grinder and make a fine puree out of it.
Heat a non stick and add oil. Then add onion puree and cook till all the water is gone and raw onion smell too.
Then add tomato puree and add powder masala ,salt ,  mix well , add vegetables and mix it.
Add enough water to cook vegetables. If you need gravy then adjust the water quantity. I wanted dry so  I added less water.
When vegetables are cooked adjust seasoning.
Before serving add lime juice and mix it and serve hot with Bhakri, naan or steamed rice.
Leftover thecha you can use it for sandwiches or spread or as chutney also.
